If you want to do more with the Native American side of it, there's also "The Legend of the Indian Paintbrush" and "The Girl who Loved Wild Horses." I know both of those are traditionally used here when we get to Texas history. There's also a book called "Hector the Bat," which is about the bats that live under the Congress Avenue bridge in Austin, and it has a sequel called "Hector Saves the Moon." And, there's a cute book called Tumbleweed Stew, that's not specifically Texas, but it's a fun book. It's a variation on Stone Soup. I'm going to subscribe to comments to see what other suggestions you get.
